Two delicious recipes…

Searching for quick, easy, new salad and something to grill…delicious and healthy.  Two delicious recipes from Antoni in the Kitchen.

Joanie and I were discussing what we wanted to pick up at the local, neighborhood grocery store.  With the Antoni in the Kitchen cookbook we purchased, we dove into Porowski’s cookbook to get a couple ideas.

We pre-ordered Antoni Porowski’s, Antoni in the Kitchen, maybe spring 2020, or 2019.  So, when it arrived via Kindle, we were figuring out what to buy at the store.  After just a little serarch, we found a new salad to try and a different spin on chicken fajitas.

Peaches and Tomato Salad

Antoni’s Peaches and Tomato Salad w/crunchy almonds was a nice summer salad.  It is different, quick and easy to put together, let’s call it a 5 Star salad.

If you haven’t had peaches on a salad, let alone grilling peaches for a salad, it’s totally worth trying.  Grilling peaches is quick and easy and putting them on the grill after the chicken is perfect.  Depending on how much heat you have left on the grill after the chicken.  I’m referring to a charcoal grill set up.  Of course, a gas grill is perfect, as well.

Grill peaches for 2 minutes / 1 minute for a fire still pretty hot and per the recipe.  Or, 3 minutes / 2 minutes for a fire that is not as hot any more.  Also, another minute or two softens the peaches if you bought more firm peaches.  The peaches are pretty forgiving.

Again, it’s a nice recipe, especially in the summer, either on it’s own as a meal or with something like the Smoky Chicken Fajita.

Grilling and outside is what I enjoy the most…hot, cold, awesome out, doesn’t matter.  I enjoy grilling, and I don’t mind setting up the charcoal grill and waiting the 20 minutes or so before grilling.  Gas grills work for me too, and then there’s no worry about the heat dying…unless you’re going out of gas…oops.  And, we have a small Lodge grill for the two of us.  We can throw it in the truck for camping, as well as the standard size for grilling for more food.

Smokey Chicken Skillet Fajita

Antoni’s Smoky Chicken Skillet Fajita…ok, so you’re thinking, wait, we’ve been talking about grilling, not skilleting.  Yes, I did go off recipe and grill the chicken, but that’s just because of my being a fan of grilling and the outside.  The chicken in the skillet with onions and peppers will be awesome.

We used boneless, skinless chicken breasts, filleted them and marinated them for 30 minutes.

On the grill, I cooked them 5 minutes on each side, then another 2 minutes each side.  This left the grilled chicken moist, but cooked through.  We then cut them up fajita style with tortillas, flour or corn per your preference.

A few of the primary ingredients for the marinara are lime juice, smoked paprika, chili powder, sea salt and oil.  And, if you could just smell the onions and peppers with garlic, they were magnificent.  In the recipe, the onions, peppers and garlic are put back into the skillet with the cooked chicken to combine everything.  We left the chicken separate and added the onions, peppers and garlic as desired.  The lime adds a real nice flavor to the marinara.  Another 5 Star recipe.

Other Ideas for Delicious Meals…

When we come across other ideas for delicious meals to snacks on our travels, we’ll be happy to share.  On our Costa Rica journey we really enjoyed the cosadas, the meal of the day.  These are a good price for a good amount of food, at the local diners called sodas.  If there isn’t a blog about cosadas after you’ve read this blog, there will be one soon.  Or, remind us and we’ll write one.  To good, healthy eating.  Stay healthy, take care of yourselves!!
